Notary vs Signature Guarantee
Notaries require state registrations/licenses to operate. Some get it for earning extra income on the side. Many currency exchanges have notaries. Many legal offices have someone on staff as notary. All a notary is vouching is that the signature belongs to the one signing it (in front of them) - there is no liability beyond that (and any liability/penalty would be the suspension or loss of the notary registration/license).

Signature Guarantee is same as Medallion Signature Guarantee. It is by a bank or financial institution officer. Beyond authentication of signature, there is also financial liability about the soundness of the document being guaranteed, that it isn't forgery or a fraudulent scheme. Be prepared to answer details of what/why, etc; you cannot claim that things are private and ask that documents be just signed. A letter prefix will indicate the level of surety - E or F $100,000,..., Z $10,000,000. There are some firms doing Signature Guarantee, but they do their own due diligence before providing Signature Guarantee.
